Spinach and Feta Cheese Puff Pastry Rolls
Ingredients:
• 1 sheet of puff pastry, thawed (about 16 oz / 450g)
• 5 oz / 150g fresh spinach leaves, washed and chopped
• 1 clove garlic, minced
• 4.5 oz / 120g cream cheese, softened
• 6 oz / 170g Feta cheese, crumbled
• Salt and pepper to taste
• 1 egg, beaten (for egg wash)
• Olive oil
Instructions:
• Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
• In a skillet, heat olive oil over medium heat. Add the chopped fresh spinach and minced garlic. Cook until the spinach wilts and any excess moisture evaporates, about 3-5 minutes. Remove from heat and let it cool slightly.
• In a mixing bowl, combine the softened cream cheese, cooked spinach mixture, salt, and pepper. Mix well until creamy and evenly combined.
• Roll out the thawed puff pastry sheet on a lightly floured surface into a rectangle.
• Spread the creamy spinach and cheese mixture evenly over the puff pastry sheet, leaving a small border around the edges. Sprinkle Feta cheese crumbles over the creamy spinach mixture, reserving some to sprinkle on top of the rolls.
• Starting from one end, tightly roll up the puff pastry sheet into a log.
• Using a sharp knife, slice the puff pastry log into 8-10 rolls.
• Place the puff pastry rolls onto the prepared baking sheet, spacing them apart.
• Brush the tops of the puff pastry rolls with beaten egg wash.
• Sprinkle the remaining Feta cheese crumbles over the tops of the rolls.
• Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
• Remove from the oven and let cool slightly before serving.
