I found using the plastic scoop from a rice coooker is brilliant for gently separating the skin from the turkey & also chicken breast. I have longish nails & even with gloves on I still bust thru the skin lol so the scoop is the go. That looks superb 😋

I recommend the spatchcock method for turkeys, it cuts the time in half while maintaining the juices

My parents have used Alton Brown’s turkey recipe for years and it’s a brined turkey recipe but it comes out very flavorful, juicy, and crispy. I’d highly recommend it bc they’ve always gotten compliments for how good the turkey tastes 😂
