Today in my little kitchen: Snow Skin Mooncakes, and not 1 but 3 different ones. And introducing my latest creation... Mooncake Jade Lapis.

--- Ingredients ---

For the eggless custard:

1 cup milk
2 tbsp butter
1/4 cup sugar
1 bag of vanilla pudding powder (40g)

For the Marzipan:

100g almond flour
2 tbsp powdered sugar
2-3 tsp Maraschino Liquor (optional; you can substitute with water)
1 tbsp water

For the Kue Lapis Steamed cake:

100g Tapioca flour
25g rice flour
120g sugar
pinch of salt
6g vanilla sugar
225ml coconut milk
Optional: Pandan aroma and food colours

For the Snow Skin dough (for 16 mooncakes):

1/2 cup powdered sugar
1/4 cup corn starch
1/2 cup glutenous rice flour
1/2 cup rice flour
1 cup milk
1/4 cup sweet condensed milk
2 tbsp coconut oil

For the Dusting Flour:

2-3 tbsp corn starch
