MIXED RICE
This dish is inspired by the Japanese Mixed Rice, Takikomi Gohan. Short-grain rice is mixed with vegetables and protein. It is seasoned with dashi, soy sauce and mirin.
WHAT YOU WILL NEED :
2 cups sushi or short-grain rice, rinsed and drained
2 cups cooked chicken breast, shredded
3 ½ cups low-sodium chicken broth
1 tablespoon garlic, minced
1 tablespoon ginger, grated
½ cup onion
¾ cup carrots, diced
¾ cup frozen green peas
1 ½ cups king oyster mushrooms, sliced
1 ½ cups bokchoy, sliced
½ teaspoon dashi powder (dissolve in chicken broth
3 tablespoons low-sodium soy sauce (adjust to your liking)
2 tablespoons mirin
Olive oil
Black sesame seeds and roasted seaweed strips for garnish (optional)
Kitchen notes :
✓ Use a heavy-bottomed pot as it absorbs and distributes heat more evenly.
✓ You can use any protein you like.
✓ Use rotisserie chicken. It'll save you time.
✓ Bamboo shoots, burdock root, broccoli, water chestnuts, sweet potatoes, other mushrooms (shiitake, enoki, button and baby bella) and water chestnuts are some great vegetable options.
