in this one, first I show you to make a basic egg yolk pasta dough. This base ratio can be scaled up or down depending on how much pasta you are wanting to make. Once the dough is made, we get into how to shape the dough into a handful of different, easy to learn and practice shapes. Finished it off with showing a quick flour and water dough, and a quick way to shape that dough as well!

You make pasta better than many people here in Italy. Really surprised me with the agnolotti del plin.

I always make dough balls with flour and water. I've been making them ever since my youngest brother was born. I always showed him the dough balls I made. When he first learned how to talk, he said that the dough balls feel soft. He is now 15 years old. He still loves the dough balls that I make.

Agnolotti del plin are with meat (rabbit, pork and beef) inside! With cheese are ravioli or tortelli

I’d really like a one egg to flour ratio along with the flour per dozen one. Makes it easier on my small brain 😅

I made pasta for my job for 2+ years at one point. And I never measured a damn thing for the handmade dough. I do remember our flour mixture though, 5 parts semolina to 1 part durum flour and half a cup of salt. This was the mix we used for no egg pasta.

Point is everyone has a different recipe for how THEY like it. So experiment with it and make it your own
