My grandma was Italian and she told me to not put salt into the pasta dough if you want to dry it because salt attracts water/humidity. Only use salt in your dough if you eat it fresh or if you freeze it.

My family, friends, and I love flavored pasta. Since my herbs are so abundant I use up my dried herbs from previous seasons in my pasta dough. It helps me use up dried herbs, takes no extra time, gives the pasta some extra oomph, looks pretty, and is just awesome in garden gift baskets. I like using citrus zest in some pasta doughs as well. There’s something really wonderful about lemon/thyme noodles in chicken soup, or lime/cilantro noodles in ramen and chow mein! The combinations are endless and yummy!!

TIP...warm your eggs and use lukewarm water. Makes the dough more elastic and smooth.

One of my fondest memory of my Grandmother is making pasta and laying the noodles out on the yellow table to dry. Every so often she’d pick up a group of noodles with her fingertips to stir them to dry better. She’d ‘catch me’ sneaking a noodle before it was dry. Such a fond memory. 💜😀

I had a boyfriend when I was in high school in the 70's who was Italian & he lived with grandma who made homemade pasta. She had racks that she dried the noodles on.

To skip the adding water i found a recipe that starts with Weighing 3 eggs in grams
Multiply by 1.6 to get grams of flour needed
Add 1/2 t salt
You are doing great making pasta and teaching everyone!

I make noodles like my German granny did, just put the flour out onto a board and put the eggs in a center well and mix with your hands. i was diagnosed with Celiac 30 years ago so it was a good thing I had this skill because you could not buy noodles in a store. I make mine out of rice and tapioca flour with some xanthan gum (adds stretch because of no gluten) After i cut mine I lay them on a cookie sheet in the freezer and when they are hard I bag them up. They cook in only 3 minutes from frozen.

I make large batches of pasta just like she does, but instead of drying mine, after cutting, I pile up a small "nest" and freeze them on cookie sheets, then put them in baggies in the freezer. When you put them in boiling water you gently teas them apart with a fork.
