from Trinidad....the pigtail is a great dish but it's brined so they were supposed to boil it first removing that extra salt before preparation

Country folk usually put pig tail in their "Souse meat"( head cheese). Along with other parts of the pig. It's not my cup of tea, but my family from Alabama grew up on it.

We coin pigtail in the Caribbean you’re suppose to boil the tail in water to remove the salt. Then cut up the pig tail then make a bouillon (soup)

You should try “The Blue Hole” Belizean food in Gardena. We took my dad for his birthday since he missed food from his home country. They have some great Belizean tamales and don’t skip on the habanero hot sauce 🔥🔥👌🏽

Jamaican here pigtails are really good especially in stew peas but you gotta boil pigtail first to get the salt out and soften it before you cook it

We use pig tails in greens and red beans in New Orleans. It’s like a seasoning, it’s salty as hell lol.

Pig tail is used as a base seasoning and the salt is to add a savory flavor. It’s not supposed to be eaten that way. We use it for broth or in a large pot of beans. I’m glad that you shared this bro! 🇧🇿
