As funny as all the memes and conspiracies are, as the guy responsible for fixing the machines, It almost always boils down to 2 main things:

1. Employees do not clean the machine. It goes into a lockout if you do not clean it a regularly scheduled time.
Either they do not have anyone trained to do it ( people quit constantly), or They just keep putting it off and it's just easier to tell customers it is broken
* This is the most common reason *

2. Not properly cleaned and/or lubricated, Not properly reassembled.
As mentioned in the video there are many crucial o-rings and parts. All parts must be thoroughly inspected during each cleaning, any damaged parts replaced, and all parts installed properly and thoroughly lubricated. If one tiny o-ring is missing or is just under lubricated, the consistency of the shakes or ice cream may become too runny, etc., or may cause major damage to machine.

Source: I am a Taylor Certified Maintenance Supervisor for multiple Mcdonald's locations, and the guy responsible for all repairs of our equipment, buildings, lots, etc.
Side Note: My shake machines have had maybe 2 breakdowns in the last 3 years that I have worked for this owner. Taylor makes high quality equipment, that functions simply and functions well for a very long lifespan.
