Growing Jicama for seeds

I started this process on June 25, 2020 and planted it on July 19, 2020. The purpose of doing this was to hopefully, get some seeds out of it.

June 25, I placed jicama on bowl with damp paper towel. June 28 it started to sprout. July 5 placed on a cup of water. July 7 roots came in. July 11 it has more roots and leaves, so I planted it into a flower pot. July 15 it grew about 7 inches tall. July 19 it was about 20 inches tall and growing into vines. In December it finally produced 3 bean seeds. I was so excited about it then, winter came and the beans died. I'll have to start again.

i don't get the point of growing from an existing tuber. If you plant it, you will still get only one tuber, unless you want seeds.

Hello, Thanks for this video, but can I ask if you know anything about when to put seeds in the ground especially if i am trying to grow this in 9b zone, AZ? It is already May, so i am thinking to put the seeds in now so i can harvest when the day length gets shorter around Dec.
