Apparently the pods can be cooked when it's still very immature. BTW, do flowering make the roots tough? I'm assuming setting seeds takes energy from the root.

Do you reserve a portion of the crop for reseeding? How is the root quality of plants that were allowed to ripen their pods?

I eat a whole one raw everyday. Today I had it cubed in my squash soup. Instant pot x5min. Consistency of a potato.
