Also those knives are *designed* to be softer and more flexible. Its so that it can easily mauver around bones and joints. We used those fillet knives when I worked in my dad's butcher shop, and they work absolutely perfectly.

I loved that, but my fish filleting knife is the same knife I baton with. Not the best and both would probably be better but it works

The first one is really more of a sashimi knife, the second is a real filleting knife. Thin, not overly sharp and flexible with a durable stout edge to cut through and skirt along the bones of the fish.

I can pretty much guarantee you that Japanese fishermen will use the "western" knife when gutting and processing fish outside.

Perhaps it is used when they get back to port once the fish has been partly processed on the boat, but you would never use a knife like the first one on a boat or in a factory because it's just too fragile.

In the EU we don’t need big knives because we don’t have as big fish as in other parts of the world so it’s not by design to be small. So its as simpel as big fish = big knive small fish = small knive
