►INGREDIENTS:
▢ 24 large Medjool dates pitted & split open
▢ 1/3 cup peanut butter unsalted & drippy
▢ 2 tablespoons roasted peanuts unsalted
▢ 1/3 cup dark chocolate chips
▢ 1 teaspoon coconut oil
▢ Flaky sea salt optional

►DIRECTIONS:
1. Line large baking sheet with parchment paper. Arrange dates on it cut side down and overlapping a bit in 3 rows, 8 dates per row. Press at the end a bit to make sure there are no gaps.
2. Using small spatula, drizzle and then spread peanut butter on it. Sprinkle with peanuts.
3. In a small pot or bowl, combine chocolate chips and coconut oil, and warm up on the stove or in a microwave until melted, stirring often. Using small spatula, drizzle on top of bark and then spread it gently to coat. It's OK if some peanuts aren't covered. Sprinkle with flaky sea salt, if you wish.
4. Freeze date bark for 20 minutes. Using a chef's knife, cut into 20 pieces and enjoy.

I love your recipes, but as a binge eater and a sugar addict, it’s hard to compare these healthier foods to the real thing…like a snickers. I think I’m going to have to just wean off the “real” things slowly and take my time before diving into something like this. I’ve tried to make this before and it just wasn’t as satisfying as I thought it would be. Sugar addiction is REAL! It takes a slow and long process to wean ourselves off of these completely horrible processed foods. In time I will hopefully get to where I will love this and deem it comparable, but as of right now I just can’t. 😢 I’m still grateful for it and I will get there! ❤ it’s a personal journey.
