I blend together a tub of cottage cheese, a whole taco seasoning packet, and a can of Chipotles in adobo sauce. Then I add in a can of diced tomatoes. I usually eat a lot of canned chicken so I mix this with the chicken for really good taco chicken that I can make super fast and it really gets rid of the canned chicken taste.

An immersion blender is great for getting cottage cheese even smoother. I blend it right in the container and I can get it nearly as smooth as cream cheese

Also, you can either buy or make some sodium citrate to add to help emulsify the dip and get things smoother like the velveeta stuff. To make it, you can dissolve some salt in some lime juice by heating it on the stove. You don’t need a lot, and it adds a nice lime kick.
