Am I the only person who is not impressed by the "secret menu" idea? When I want to eat or drink I simply want to know what is available and how much it costs. I don't want to have to know secret codes or ask for secret items. I'm in the UK and we don't have the concept of "secret menus" we're just grateful if our food arrives, bears some passing resemblance to what we actually ordered and the wait staff aren't scowling at us.

You can totally buy Brazilian cheese bread in stores too. In the freezer section, very often with the garlic bread. Brazibites is one of the brands. So goos

For the pão de queijo, if u can grab any dulce de leche there, I recommend putting some either in the middle or use it as a dipping sauce. The mix of dulce de leche sweetness and the cheesy flavour is everything.

So .... why do secret menu items exist?! Is there an actual printed secret menu not offered to guests unless requested? Are they old items that have been dropped from the printed menu? New items that haven't yet appeared on the printed menu? Both? Neither? Just random items that the current kitchen staff likes to/knows to prepare? All or None of the above?
