It's probably because not all devs are well versed in different languages all the time and as talented as Tsoding. I often have to look up some simple syntax of a lang if I haven't used it for a while. Also, for example, in web dev, new frameworks spring up weekly and it's hard to keep up with them. Likewise, there is no bottom to reach in the vast sea of C++ or Haskell. So, without a specialization to narrow the scope, normal average devs will get easily burned out.

1:15 - You don't need to loops. If else is enough. All loops can be done using ifs and gotos.

Starting from the premise that our job is to solve problems, you then jump to a corollary that we should be ready to do it with any tools/langs, and this kind of logic seems suspicious to me. If my job is to get things done and nobody cares what I use for this, why can't this mean that I should be able to choose whatever tools/langs make me most comfortable and efficient?

The main task is to solve the problem of course, and I agree that people should understand underlying concepts rather than languages. However, the same solution for a problem can be expressed in many different ways. Some languages perform better, some allow for less errors on the developer's side, some are easier to understand, some are neither (looking at you js). And I think all of these matter when chosing a tool to solve your problems.
