Best not-sourdough sourdough bread - Sourdough Saturday

Another step in the sourdough journey and a great stopping point as well. A poolish is a great way to long culture yeast to build some flavor and get some benefits from the long proofing times. No need for sourdough but this covers all of the basic techniques. This is a great, crusty bread that doesn't require a dutch oven while still having that sourdough look and feel. Give it a try, the recipe is below.

Recipe:
Poolish:
200 g flour
175 g water
2 pinches of yeast
Dough:
350 g flour
275 g water
45 g vital wheat gluten
poolish from above
13 g salt
1 pinch of yeast
Might require more flour
475F covered for 20 minutes, 425F uncovered 10-20 minutes
