ITALIAN STUFFED ZUCCHINI BOATS! High protein and reheats like a dream, so they’re ideal for healthy meal prep!

Zucchini boats, you are a dream (boat). Packed with zesty Italian sausage and topped with crispy garlic Parm breadcrumbs, they’re the perfect healthy comfort food for dinner! You can keep it low-carb or pair them with garlic bread because you totally deserve it. Rewarm in the oven and make busy weeknights less stressful
YOU’LL NEED:
-4 zucchini
-½ lb Italian turkey sausage
-½ c chopped red onion
-1 large red bell pepper, diced
-½ tsp kosher salt
-¼ tsp black pepper
-1 tsp minced garlic
-2 slices whole wheat bread
-½ c grated Parmesan
-2 T olive oil
-Fresh basil
Sauté sausage and veggies, mix in garlic and breadcrumbs, then stuff the zucchini. Bake, and enjoy!
