This HUGE meal-sized vegan Greek salad has been one of my go-to vegan lunch recipes lately 😋 Give it a try, and I promise you'll be craving it again and again!

➡️ SALAD INGREDIENTS:
Lettuce mix of choice
1 cucumber, sliced
1 tomato, chopped
1 carrot, sliced (optional)
Red onion, to taste
1/2 can of chickpeas, drained and rinsed
1/4 package vegan feta cheese by @violife_foods

➡️ DRESSING INGREDIENTS:
2 tsp red wine vinegar
2 tsp lemon juice
1-2 tbsp olive oil
Salt, pepper
1 garlic clove, finely minced
Dash dried oregano
1/2 tsp pure maple syrup
1/4 tsp Dijon mustard

here's my recipe for vegan Greek Salad:

Greek Dressing
¼ cup red wine vinegar
2 cloves garlic, minced
1.5 teaspoons each oregano and kosher salt
1 teaspoon or more Dijon
½ teaspoon each freshly ground black pepper and honey
½ cup EVOO
Shake to combine all together.
If using cruet, add vinegar to V line, then all remaining ingredients except oil, then add oil to O line. Shake to combine.



Greek Salad
Romaine lettuce
Cucumbers, sliced
red onion, sliced
red pepper, chopped (or chopped roasted red peppers)
grape tomatoes
canned chickpeas, drained
Kalamata olives
Artichoke hearts, sliced celery, diced carrots (optional)
Pita Bread, cut in half then cut horizontally into half-moon circles

Assemble salad with ingredients except pita.
Drizzle or brush pita with some EVOO, salt, pepper, and some Italian seasoning and bake 10 min. at 300oF. Cool slightly, then break into pieces over salad.
Top with Greek Dressing.
