Welcome Back to Episode X of All Things Greek! A series where I share recipes from my childhood. Today we’re making Maroulosalata and Lahanosalata - AKA GREEK LETTUCE AND CABBAGE SALAD BECAUSE WE DON'T JUST EAT GREEK SALAD!!!!!

Here's how to make them:

LAHANOSALATA:

Ingredients:

1 small-medium green cabbage, shredded (about 6-8 cups shredded)
1 tsp salt
1/2 tsp pepper
1/4 cup finely chopped black olives
1/4 cup finely chopped green olives
6 green onions, chopped thin
1/2 cup crumbled feta cheese
1/3 cup chopped fresh dill
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp dried oregano

Instructions:

To a large bowl add the shredded cabbage and sprinkle over the salt. Use your hands to massage the cabbage with the salt for a few minutes - this helps slightly soften the cabbage.

Add all the remaining ingredients to the cabbage (pepper, olives, feta, dill, olive oil, red wine vinegar and dried oregano) and toss well. Serve and enjoy!

MAROULOSALATA:

Ingredients:

1 ½ heads romaine lettuce
5 sprigs green onion
1/3 cup fresh dill chopped
2 tbsp. olive oil
2 tbsp. vinegar (or substitute with lemon juice)
1 tsp. salt
½ tsp. black pepper

Instructions:

Wash the romaine lettuce and chop to your desired size.
Transfer to a large bowl.

Thinly slice the green onion and add it to the bowl along with the freshly chopped dill.

Add the olive oil, vinegar, salt, and black pepper.

Mix to combine, and adjust seasoning to taste.

Serve this delicious salad as a side dish to any meal!!
