I did this a few years ago and it came out amazing! I shared it with family and they keep bothering me about it. I let my peppers ferment for 9 months and used the ferment water to keep bugs off my garden.

WATCH OUT open the jar a couple of times to let pressure escape, otherwise you'll have a bomb. Literally

This sounds delicious and healthy. It probably taste great on cauliflower wings or even potatoes, it’s probably great on anything you like spicy. The fermentation helps with gut health as well and the peppers are full of vitamins and nutrients that protect the body. This is great.

My no sauce will be much milder. I had a ton of green tomatoes, red ones too, jalapeños (red ones cus it’s my garden and I can wait for perfection) and tobasco peppers, added onion, garlic and spices (the ones I like are no traditional: mustard seed, peppercorn, bay leaf, sumac, and I’m forgetting something. Topped it off with 2% canning salt/distilled water mix. It smells so good! Can’t wait for Friday! Note: I used an old tshirt over the top as it has to breathe and I used a very large jar that I don’t have a burping lid for…don’t use cheesecloth…made that mistake and threw the whole jar out as it was in the back for a vinegar mix and one day there were flies in my house…I was almost sick).

Blend it into a mash and use fermentation lids. Mix it up everyday. The brine is just 1 tsp of salt per 1 cup of water. Make sure the salt is completely dissolved. Also make sure you pasteurize it so you don’t get botulism. Cheers.

I was just thinking of things to do with my abundance of cherry tomatoes! I also have a couple of bottles of my chilis in olive oil...need to use them! Thanks so much!

Just made this and it’s so good!!! I would say it would be a little better (for my personal tastes) to reduce the brine a little before blending to make it a little thicker, add a teeny bit more salt and a teeny bit of xanthan gum to get it to stick on foods.. other than that I’m obsessed 🤩 next time I’m going to add pineapple 💫
