I think some people who say they don't like soup, prefer chewing what they eat. Which is entirely possible to have with soup (pizza, sandwich, bread, crackers, etc.)

So good... replaced the potato for chickpeas, added Scotch bonnet peppers for spice and cilantro instead of parsley. Cooked everything down and blended then added the lentil to cook for texture. So good! And the lemon is a must!

I LOVE red lentils.

Being American and loving to cook, the first time I made them, I made up my own soup, which is also quite tasty.

I sauteed a diced yellow onion and browned it in good quality olive oil,

I added diced 8 ounces of diced Portobella mushrooms and continued sautéing until they gave up their water,

I then added 2 cups of whole red lentils, with enough water to fully cover,

A teaspoon or two of Vegeta in place of the bouillon cube; Vegeta is a central European powdered mix of salt with a variety of dehydrated vegetables,

Sprinkled liberally with garlic granulated garlic, and a good Italian seasoning or Herbes de Provence,

Cut up two or three whole tomatoes to add to the soup, brought to a boil, and reduced heat to simmer for half an hour

At times, I've added a good sherry at the end, which adds depth and flavor, but it's also great without it,

After adjusting herbs and spices, it's ready to serve.

I don't blend it together, and it doesn't need it - enjoy!

I also love red lentils as dhal.

Fun fact; It's regular dal in 'India' & 'Bangladesh, ' & other south asian country, and we have it almost regular in Bangladesh with rice....the combo is simple but delicious "Dal vat"

In Pakistan we call it "masoor ki daal" ka shorba and its delicious. We sometimes add "moong ki daal" in it and some times chicken too.

I wouldn’t have blended it. I love the texture before it was blended. Adding some coconut milk would sweetness and creaminess too 🎉

Curried Lentil Soup:
1 carrot
1 russet potato
1 yellow onion
5-7 garlic cloves
1 cup lentils
1 boullion cube
2 tsp curry powder
1 tsp cumin
1 tsp dried parsley
8 cups water
Salt & pepper
Simmer 20-30 mins*

We eat that in Egypt too. It's a very old recipe and we love having it in winter.

I make this all the time and it's delicious. You if you want to avoid the starch, replace the potatoes with more carrots and celery. It's still SO good.

This is nearly exactly the same as what my late mother used to make- it's been my favourite for over 30 years and my kids now love it too. Absolutely delicious healthy comfort food ❤
