Eating more plants was the biggest change to my skin. More than drinking water (2-3 litres a day). More than any beauty product. I think it’s because of the changes to my gut biome. It gets easier and more enjoyable with time, so even if it’s difficult to start, give it a try! Bonus: my mood and sleep improved a lot too

Ingredients

1 yellow onion, diced
1 sweet potato, medium, diced
1 carrot, large, diced
2 stalks celery, diced
5 cloves garlic, minced
1 tbsp paprika
1 tsp black pepper
1 tsp dried thyme
2 tbsp nutritional yeast
1 cup wild rice blend, or basmati
6 cups vegetable broth
15 oz chickpeas, 1 can, drained and rinsed
2 handfuls kale, chopped
¼ cup cashew butter, or tahini, or coconut milk
½ lemon, juiced
salt, to taste

Instructions

1. In a pot over medium heat, add the yellow onion, sweet potato, carrot and celery. Add a tablespoon of vegetable broth or oil, and saute until the sweet potato is softened slightly, at least 5 minutes.
2. Stir in the garlic, paprika, black pepper, thyme and nutritional yeast. Saute for an additional 7 to 9 minutes, until the vegetables are almost completely cooked. Add the wild rice and stir.
3. Add the vegetable broth and chickpeas. Bring the soup to a boil, then lower the heat to medium, and simmer covered for 30 minutes, until the rice is cooked
4. Add the kale and the cashew butter, tahini or coconut milk to make the soup creamy, as desired. Taste and adjust seasonings as needed. I like to finish off mine with a squeeze of lemon.

HEAR ME OUT! This is how I healed my leaky guts and digestion problems after 15 years of struggle. Over the past two years I have made an effort to eat smaller portions and to have a serving of vegetables with lunch and dinner. And the crazy thing (or maybe not so crazy thing) is that now I actually crave vegetables! They make me feel so good.

Since I started a garden mast year for the first time, I've been enjoying more veggies than ever before!! I've slowed down this winter, but I'm not stopping 😊 and I've been adding multiple veggies to every single meal I eat. I started making a soup that packed with lots of veggies and beans, and it's my new favorite 😍

As a vegan I always get people asking me "what do you eat?" My answer lately has been "lots of foods. What do you eat?" And usually it turns out that their diet is more limited than mine 😂

This dish reminds me of Bisi Bele Bath (a rice and lentil based dish from Karnataka, India). We add tons of veggies, a healthy amount of rice and lentils, not to mention pure desi ghee. It's divine and the thinned down version of it is a good option for toddlers and preschoolers. ❤
P.S. Its a crime to not mention the infamous Khichdi. Love them both 💕
