Honestly don't know why its taken me so long to listen to JapanEat with earbuds - I realize now that the lack of mouth sounds as he speaks is why his voice is so enjoyable and smooth. 10/10 recommend earbuds.

Those are chinese egg noodles, a little harder to get right they are amazing when its perfectly al dente giving a 'bouncy' texture and provides the soup extra flavour.

If its too hard then it is just undercooked, too soft becomes overcooked and soggy.

I had to have tantanmen yesterday, so I went to a local restaurant here in Kentucky. Suffice to say, any disappointment you had with your bowl of tantanmen would be dwarfed by what I felt. No spice at all. But they did have a cute robot server (accompanied by a human minder) that spilled the sauce for my gyoza appetizer all over the plate.
