For anyone reading this, this is a much better method for motion graphic video files vs. VLC. For whatever reason, after a VLC conversion my graphic rotates 45 degrees and it's more headache than it's worth trying to fix it. Hand Brake is much better and does not do this. Thanks so much Marcos!

If you hold the cursor over the different tabs, a drupdown description gives you info on what the tab does and how best to tweak it

Hey! I'm pretty sure the interlace settings have to do with videos that are 1080i instead of 1080p for instance, and it probably has to do with recognizing if the video is interlaced (where it basically updates through half a frame at a time instead of a whole frame) and is asking if you want it to do it's best to convert it into a 1080p file rather than 1080i. Hope that helps!

This actually is reducing the file quality by a huge amount. H.264 is a compressed file type, good for the last step of video production - if you don't need to make any more changes. If you need to do any colour grading or do something like key out a green screen, this kind of compression will make it significantly more difficult. Otherwise if nothing needs to be done to it and the difference is in perceivable then it's totally a good option. It can also be done in any video editing software.
