First way. Every self respecting plumber knows that. Let’s be honest though, there are times when we use it the other way because of space, or lack of.

Every spanner has a 15deg offset to allow for access o tight spaces with limited rotation. So both ways are appropriate.

I don’t use adjustables. I normally just grip it with my teeth and twist.

Depends on orientation compared to the wall surely? Whichever direction gives you most space per turn. If if it's clear like it is in the video, I would have gone for the 1st way

First way, but there's a hidden, clever reason. The simple explanation, that there is less stress on the lower jaw, is not exactly right! In the first method, the lower jaw is actually under more stress, because pressure is applied near the far end of the jaw. That longer lever arm puts more torsional force on the lower jaw, locking it against the walls of the sliding thumbscrew. The locking mechanism prevents the thumbscrew from backing off under high pressure. So the thumb screw is easy to turn but locks into place under the correct forces. Clever engineering hiding in plain sight.

If you pump enough silicone around all threads, gaps and anywhere else it will go, then you'll have no need for any spanner, adjustable or not. A few turns on said nut with your pinkies and the jobs a goodun.

Initial attempt in the first position, but if I can get more movement or leverage in the second position, then I’ll switch over.

Easy.. so when apply pressure, the worm does not slacken causing the nut to round off.

Well as any mechanic knows you wouldn’t be using an adjustable spanner. You’d be using a ring spanner or a socket.
But, if the adjustable is your only option then it’s the first orientation, but due to space under a sink etc it’s both ways to facilitate movement of the nut, even potentially being vertical to allow that few degrees of movement to allow the other orientation to get on the flats.
But it’s not my job to teach you yours, other options are available before electing for an adjustable 👍🙌
