ΣΑΜΑΛΙ Katerina Sweet Cooking
Σάμαλι ένα γλυκό που μπορεί να ακούγετε δύσκολο αλλά πιστέψτε με ακολουθώντας τα βήματα που σας δίνω για αυτήν την συνταγή η επιτυχία είναι σίγουρη .

Materials
250 g of strained yogurt
250 g of fresh milk
300 g granulated sugar
175 g fine semolina
175 g coarse semolina
(If you don't have fine flour, you can add 350 g of coarse semolina)
5 g of baking powder
1 vanilla flavor
Zest from a lemon
5 gr. grated mastic
For the syrup
700 g granulated sugar
500 g of bottled water
2 tablespoons of glucose.
Procedure
Put all the ingredients together in a large bowl and mix well. Leave the mixture for 30 minutes to 1 hour in the refrigerator. Then we pour the mixture into our buttered pan with a diameter of 30 cm. or if you have a long narrow pan of 25x30 cm.
Bake in a preheated oven at 150 degrees for about 40-50 minutes.
If it hasn't gotten any color on top and it's getting close to the end of the baking time in the last 5 minutes of the time, you will turn on the grill in your kitchen to get some color on top of the dessert..
For the syrup: (ATTENTION because there is a problem when the mastic is poured into the syrup, it is better to put it in the mixture and not in the syrup) put the water and glucose in a saucepan, as soon as it starts to boil, add the sugar. When it reaches the boiling point, let it boil for 5-7 minutes, it will be a thick syrup.
As soon as our dessert is done, we cut it into pieces so that the syrup can pass through.
Be careful, slowly pour the syrup, it will thicken and then pour syrup again.
Decorate with grated almond.
