OMG, will people calm down! I have been on keto for two years and have gone “dirty” here and there. So what! I’ve maintained my weight all through! If I see that I gain a couple of lbs, I don’t flip out. I just pay closer attention and I’m back on track. I’ve gotten so many good recipes and tips from you girls and appreciate them ever so much. Always learning. It’s a marathon not a sprint so everyone just do you.

As someone who used to make all my bread - before gluten intolerance, then keto - I was always taught that gluten needs to be worked (kneaded) to make the fibers stretch and stay flexible. Otherwise, they “bloat and explode”. The gas from the baking powder or yeast pushes the bread molecules apart but they’re not stretchy enough to hold the gas. So 🗯️! I would knead the dough until it’s no longer sticky, and bounces back when depressed about an inch. Then allow it to rest about 5-10 min. It should slowly raise then in the air fryer and “bake” uniformly.

If you use King Arthur’s Keto flour, adding 1/4 tsp of cream of tartar. Use a silicone bagel mold, bake 370*F for 20 minutes in a convection oven (or air fryer), they are perfect and do not collapse

I make this everyday the recipe is this.
1/4 C VWG, 1 tsp cornstarch or flour, 1/2 tsp baking powder, 1/2 tsp vinegar, 1/4 C water, mix and form into ball, let rest for 15 min, no kneeding. Oven temp 365 degrees with convection if you have it, or until crust is nice and brown. About 15 / 20 mins. I love to toast and put cream cheese, eggs and bacon yummy. I also make 2 out of this recipe as it's so filling...Enjoy

To keep the dough from flying up into the heating element in the air fryer, put a rack with legs above the dough.

Made again in the oven and doubled the batch. Made 4. Put salt and yeast and kneaded it and let it rest. So much better than yesterday’s attempts. I now have my favorite roll. I let cool before cutting and slightly toasted them, then topped with cream cheese and everything beagle seasoning. I can hardly wait till my kids try them🥰

I have been overweight since childhood and was unhappy about my weight and looks, but especially about my health for a loooong time. one thing I always do when I use vital wheat gluten in a bread is I add a little bit of yeast just for the flavor and smell.

Same sentiments! I do low carb intermittent fasting or keto but in a bit of "relaxed" version and it still works on my end. As long as my blood work are in all good results and I'm also losing weight, then I'll keep on doing that style of mine.
No hate to those strict keto or low carb group. ✌🏻

I sure enjoy your videos. I am currently 68 yrs old and am also on a relaxed keto diet...sometimes more relaxed than others. Still slowly losing weight and having a grand ole time. I would watch you girls if you were selling used cars. You are funny and entertaining. Keep up the good work!

Being gluten sensitive makes me sad. Any gluten at all inflames my joints for days. So happy for the people who are able to use those products without issues. Thanks for sharing this because so many can benefit from it.

I absolutely love this recipe. Changes I made, add salt - everything tastes better with salt. Also i added far more water than you so it was a really loose mix, i patted it out to make a flatbread and cooked it lower temperature and far shorter time. Made a perfect naan bread 😊👍

I make very low carb bread for my hubby who has T2 diabetes. It is a slight tweak of Diedre's bread. VWG is a key ingredient along with oat fiber. His bread is 3 net carbs per slice and does not raise his blood glucose at all. 😊

I make my own keto bread (Mary's test kitchen recipe) with vital wheat gluten, oat fiber, flax seeds and yeast. I swap half the flax seeds for Caputo white flour which improves the taste and keeps the carb count low per slice. It bakes up nice and fluffy in the oven. The slices are soft like commercial bread yet sturdy enough for sandwiches or burgers.
