Easiest homemade blueberry frozen yogurt

It doesn’t get easier than this! I used 3/4 cups of frozen blueberries, 1/3 cup of plain yogurt, a splash of freshly squeezed lemon juice and that’s it! Keep in mind that I am diabetic so I didn’t add any type of sweetener to the mix. If you’re not a diabetic, I highly recommend some honey or maple syrup to make it a bit sweeter. But honestly, if the berries are sweet, the first three ingredients are perfect on their own! Note, I often use Greek yogurt for this recipe, but lately I’ve really been enjoying skyr, a creamy traditional yogurt of Iceland.
I used a small food processor to mix it all together and ran it for about 3 minutes to make it extra creamy.
I’m not a medical professional and I don’t have any kind of nutrition training, so please do your own research about what I’m about to say, especially when it comes to diabetes! I have blueberries and yogurt almost every day in the morning, sometimes in this format and sometimes just the fruit and yogurt without pulverizing it. I find that I have a burst of energy, it helps me stay full it’s super tasty and my blood sugar readings are stable. I never get spikes with blueberries! Please do monitor this for yourself and check with the medical professional before adding anything to your diet when it comes to diabetes. One last thing that I’ve noticed, and I have no science knowledge to back this up… I very rarely get colds. I’m not sure if it’s the blueberry antioxidants, but I’d like to think that it helps.
