Olive Tapenade Recipe

Olive tapenade is a spread made of olives mainly. Black or green olives are ground to a coarse or fine consistency with garlic and seasoning. I came up with a quick recipe to honor this appetizer. It's a traditional spread from southern France, and they have been making olive tapenade tapas there since ever. You can serve it up over baguette slices or with crackers as a dip. I just love it as a little snack with some bread while I'm binge watching my favorite show. The recipe has been enhanced so that you can easily make it at home from scratch.

00:00 - Pit Olives
00:16 - Grind Garlic + Olive
00:39 - Season and add Olive Oil + Lemon Juice
00:52 - Mix

Ingredients
9 ounces Olives green or black unpitted
1 clove Garlic fresh
1 Tablespoon Lemon Juice fresh
1 Tablespoon Olive Oil extra virgin
½ Teaspoon Salt
¼ Teaspoon Black Pepper
1 Teaspoon Herbes de Provence or Thyme as substitute

Seriously - who removed the stones from olives like that? Crush the olive under something heavy and then just pull them out. If the olive is too firm for that to work, just get a different olive - life is too short :)
