Perfect Soft Gulab Jamuns made using full cream milk powder, all purpose flour and Baking powder. Traditional Jamuns are made using Khoya which takes some time to make but this recipe is easy to follow for any beginner.

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
FOR DOUGH
1 Cup | 115g Milk powder (measure in gms recommended)
1/2 Tsp Baking powder
2 Tbsp All Purpose Flour/Maida
1/4 Cup | 62g plus 1 Tbsp Full fat Milk, room temp
1 Tbsp Ghee
3 Cups of Ghee or Oil to Fry (I used 2 Cups Ghee and 1 Cup Oil)
FOR SUGAR SYRUP
2 Cups | 400g Sugar
2 Cups Water
3 Cardamom pods, crushed
8-9 Saffron strands, broken
Few drops of Rose water essence
𝗠𝗘𝗧𝗛𝗢𝗗
1. For best results, weigh the milk powder. We do tend to put more or less in our measuring cup and so the texture gets affected. I weighed the milk too 62g plus i added a Tablespoon more to the Cup. I didn't have to add any extra milk.
2. Sift together the Milk powder, All purpose flour and baking powder. Sifting really helps to make smooth crack free balls. Do not skip. After Sifting, mix it thoroughly so that the baking powder can get distributed evenly.
3. Mix the Milk. Add all at once and mix with a spoon or a spatula. Do not knead with fingers. It should be a Sticky dough. Cover airtight and Allow to rest 10-15 mins.
4. After 15 Mins, Add ghee. Mix well. Make smooth balls by greasing your hands with ghee or oil. I used a measuring Tablespoon to scoop out equal quantities. Makes around 10-11 balls. Cover with a kitchen towel to avoid them drying out.
5. Fry them immediately in hot oil or ghee on Low Heat till Golden brown. Frying in Ghee will make a lot of difference in the taste. I used 2 Cups Ghee and 1 Cup Sunflower OIl and still had a great rich taste. Please Do not skip the Ghee. After frying, Drop them in the warm sugar syrup. Soak overnight or atleast 5-6 hrs.
6. For Sugar Syrup, Mix Sugar and Water in a pot. Heat it till the Sugar dissolves and bring to a boil. Once boils, add cardamom pods and saffron strands. Simmer it on low heat for another 5-6 mins. Do not wait for any string consistency to form. Add the rose water essence at the end and keep covered in a warm place.
