What is Canning? The Science Behind the Canning Process

Have you ever wondered what exactly home canning is? In this video Annette Thurmon easily explains what canning is and the science behind safely canning and preserving food.
Annette takes us through the process of storing food in a Ball glass mason jar with a 2-piece closure (band and lid) and placing in high heat. This destroys microorganisms and hermetically seals the jar in an airtight environment to prevent new microorganisms from entering the mason jar and spoiling the food.
