How to Make Soft & Chewy Lemon Crinkle Cookies

INGREDIENTS
for 20 cookies

1/2 cup butter, softened (113g)
3/4 cup granulated sugar (150g)
1 egg
2 tbsp fresh lemon juice (30ml)
1 tbsp lemon zest (6g)
1 1/2 cups all-purpose flour (192g)
1/2 tsp baking powder
1/8 tsp salt
2-4 drops yellow food coloring (optional)
Powdered sugar for coating

Bake at 350°F (180°C) for 12 minutes.

I just made these and they are AMAZING 10/10 definitely recommend
I used less butter to make them a little “healthier” (probably a little more than half of what the recipe called for) and I put in some extra lemon juice just to use the whole lemon and the cookies turned out really well with a nice lemon flavor
Also I only chilled them for 30 minutes because I was low on time and I don’t think it really affected them

I had no lemon but did have limes. I used them instead. I didn't use yellow food coloring but used green. These are delicious and so easy. Great summer cookies.

The only modification I made was I added a tiny splash of vanilla. These cookies are so good! Their sweet, tangy, and delicious! I will definitely be making them again soon! 💕
