Hello everyone! I tried out this recipe about a week ago and heres what l think:

1. These cookies were absolutely DELICIOUS!
2. I tried using a full egg instead of a yolk, it didint make much of a difference to me.
3. I used a little bit less butter and sugar. I like desserts not too sweet.
4. I must warn you that grating the lemon zest is NOT GOING TO BE EASY. (I broke a grater while doing this step so BE CAREFUL.)
5. The baking time will take a bit longer than what it says. Mine were ready in about 17 minutes.

Overall, the cookies turned out AWESOME 🔥 Perfectly lemony and moist too!
I wil rate this recipe, a 9.7/10.
You gotta try this. 🤩🤩🤩

Just a quick tip!!! When creaming your sugar and butter (I use a hand mixer like you), keep going until it has tripled or doubled in size, is very light in color (almost white), is fluffy and you see very small granules of sugar. The longer the better, as this incorporates air into the mixture. Then, once you add your eggs and lemon juice, the air in the mixture acts as an emulsifier and instead of coagulating, turning all chunky as shown in the video, it blends together superrr smooth. The batter is much more stable like this and if you’re in a pinch, can use less chilling time if that’s what your recipe calls for. Doing this leads to lighter and fluffier baked goods, ones that are much more stable, the air acts as an extra leavening agent to create a perfect crumb, helps with texture, adds volume, and prevents sugar from being unevenly distributed.

I promise, this extra step (that is quick) makes anyyyy recipe 5x better. ❤️❤️❤️
