The restaurant I used to work at had branzino, but they would trim off all the skin and bones and such. They let me take the scraps home one day and I made fish stock out of it. Dunno if it was the right kind of fish for that, but let me tell you, the seafood gumbo that stock made was some of the best I've ever had. Almost makes me wish I still worked there.

Ive been like obsessed with branzino since my dad bought some branzino fillets from trader joes. Ive been enjoying them alot just with salt, pepper, garlic powder, sauteed in a pan on medium low (both sides) and with a squeeze of lemon. Soooo good and great low calorie source of protein

For a moist fish, don't bake it. Steam it. Put salt ginger, soy sauce, and scallions in the body, drizzle soy on top. steam the fish on a steamer or on a plate raised up on an opened tuna can that is also filled with water so it doesn't float. Put in a pot big enough for the fish with a lid that covers everything well. Steam for 10 minutes. Done. This is a *classic* method for billions of Asian home cooks because it's delicious and it works.
