The more I look at the enemies here, the more they remind me of the infected citizens from Bloodborne.

Remember What Chris said in his letter in RE2 Remake? He was heading to Europe to dig up dirt and try to expose Umbrella's European branch. It's possible these people and the entire Village have been one big testing ground for Decades since the times of the original resident evil.

And since Chris is all about his mission, that being taking down Umbrella and its darker Remnants, it's possible he's using Ethan as a plant unbeknownst to Ethan himself, to try and get intel seeing how chris stands out in a crowd.

Also with the drawing and statues of this parasite at 1:00 and 1:51 have a similar look to Las Plagas from RE4, then again there are a lot of familiar elements in this to RE4. Social class also plays into this seeing in the original trailer there seemed to be some very well-dressed wealthy people. It's possible that these people are infected but just like other parasites and viruses, it affects people differently. Some of the "zombies" looked liked villagers who couldn't adapt to the "new" virus and became monsters while the people in the castle may share a symbiotic relationship with the parasite similar to Chief Mendez, Salazar and Saddler From RE4 and may be able to control the infected by basically being puppet masters and can keep them at bay.

And at the end, that's definitely a merchant lol
