The classic spicy and tangy Red Chutney for dosa is made with main ingredients like coconut, garlic, roasted chana dal and dried red chilies with lemon (substitute tamarind) served with dosa or idli is main condiment of South Indian cuisine.

WRITTEN RECIPE:
Soak 6-8 dried red chilies in hot water for at least an hour.
Heat 1 tsp oil in a pan, add 1 tbsp sesame seeds, roast for few seconds. Add 1 medium size onion sliced. cook until softens. Add few cloves of garlic and cook until onion changes color slightly. Add red capsicum/ bell pepper for color but it is completely optional. Add 1/4 tsp salt or as per taste. Let the mixture cool.
Now in a grinding jar add onion mixture, soaked red chilies, coconut powder, roasted chana dal (dalia) and use the chili water to grind into smooth paste, you may add lime juice or tamarind to chutney, adjust consistency according to your preference. Chuteny is ready to be served.
