If you are on a gluten free diet, then this pancake recipe will become your favorite breakfast. It is very simple and easy to make.

Ingredients :

3 Large eggs
3/4 Cup Coconut milk
1/2 Cup coconut flour
3 tbsps Coconut oil
1 tsp Baking powder
1.2 tsp Salt

Mix the wet ingredients in a bowl until combined. Then in another bowl mix the dry ingredients. Slowly add the dry to wet ingredients and stir well until they form a batter. The batter will thicken as stirred. The batter will be thick and will flatten out as the pancakes cook.

In a pan, apply oil. Then take a scoop of batter and pour it in the pan. Cook for 1 minute or until the sides are cooked. Then flip it over and cook the other side until cooked. Serve it will fresh fruits, nuts, seeds and your other favorite toppings.

GREAT recipe I cut back on oil and added a a bit of vanilla to taste and then added water to cut back on calories

I tried this and my pancakes came out cakey and they didn’t feel cooked.. :( second tired trying to make coconut pancakes, , I will get it lol
