EGGPLANT PARMESAN INGREDIENTS:
2 medium eggplants, sliced
2 cups all-purpose flour
Vegetable oil, for frying
6 large eggs
2 cups Parmesan cheese
2 tbsp flat-leaf parsley, chopped
Salt and pepper
4 cups homemade marina sauce (see link in recipe for full recipe)
3 to 4 cups shredded mozzarella
