My husband Joe has been trying to replicate a recipe that a neighbor use to make when he was a child. The neighbor's husband was originally for Roatan and he brought the recipe from there.
For almost 37 years, Joe has asked m to help him figure out how to make this dessert, but I couldn't because I didn't know how the cake looked finished. Finally after perfecting cassava cake and potato pound, we put a couple of recipes together and made this confection

It looks like the cassava and coconut pone made in Trinidad. The Philippines also have their version. It's usually crusty on the top and gelatinous below. Haven't had that in years. I suppose any starchy root vegetable would works. Joe's taro/coco yam came out very well.
