LOW CARB Muffins Recipe | KETO Chocolate Almond Flour Muffins | Suz and The Crew

These low carb muffins are packed with MCT oil, thanks to Smirk's yummy fudgey brownie protein powder! The only thing better than keto chocolate muffins are keto protein powder and MCT oil muffins! They give me such an energy boost, even though they taste like I'm eating dessert. I prefer to eat them cold as it just improves the texture of these almond flour muffins. I tried a few different variations before I settled on this protein powder muffins recipe and I think you are going to love it!
Chocolate Salted Caramel Smirk Protein Powder Muffins Recipe | Suz and The Crew
Ingredients:
2 cups almond flour
1/4 cup Smirk Fudgey Brownie Protein Powder
1/4 cup cocoa powder
1/2 cup granulated Swerve
1 tbsp baking powder
1/4 tsp salt
3 large eggs
1/2 cup heavy cream
1/4 cup unsweetened almond milk
1/4 cup avocado oil
1 tsp vanilla extract
1/2 cup (70 grams) Lily's Chocolate Salted Caramel Chips
Instructions:
Preheat oven to 325 degrees fahrenheit. In a medium sized bowl, whisk together almond flour, Smirk protein powder, cocoa, Swerve, baking powder, and salt.
Add in eggs, heavy cream, almond milk, avocado oil, and vanilla and mix well until fully combined. Gently fold in Lily's Chocolate Salted Caramel Chips.
Line a standard, 12-cup muffin tin with parchment liners and fill each to top with muffin mixture. Bake for 25 minutes. Allow to fully cool (approximately one hour) before transferring to a separate container and storing in refrigerator. Best served cold but also taste great room temperature. Approximately 4 net carbs each.
