Ikaria Fettucine al Greco Greek Yogurt and Herbs by Diane Kochilas

What do Ikaria and Fettucine Alfredo have in common? Well, nothing really, except that this version of a creamy fettucine dish is a lot like the classic Alfredo, without the eggs, butter or heavy cream. It's a dish I learned to make from my friend Eleni Karimanli on Ikaria.

Ingredients:

1 pound fresh fettucine or tagliatelle
2 cups mixed finely chopped fresh herbs: marjoram mint, oregano, wild fennel, parsley, thyme, rosemary
1 tsp. grated lemon zest
2 cups Greek yogurt
Salt and pepper to taste
4 tbsp. olive oil
1 garlic clove minced

The dish Chef Diane makes on this video and the recipe for it at her site are NOT the same. On the printed version, there are no onions called for and it says to add 2 cups of the pasta water to the yogurt/pasta mixture. In the video, it looks to be about 1 cup of onions and only a small amount of the pasta water is used - definitely not 2 cups worth! Additionally, the pasta on the video looks like a dried version and the linked recipe calls for fresh. Regardless, I think this dish looks amazing and I am making it tomorrow! Love her recipes and the program, "My Greek Table". Always an enjoyable watch, even repeats!
