Greek Bagels, aka Koulouria

These sesame bread rings are called koulouria and they are the Greek answer to a bagel! They are sold off carts on street corners in Athens and Thessaloniki, and they are a great little snack or even quick breakfast on the go if you happen to be strolling around. Many people pick them up on their way to work, to enjoy with a mid-morning coffee.
Koulouria are also split open and stuffed, just like bagels are, with everything from cream cheeses and smoked salmon to tomatoes and feta. The most "traditional" way to enjoy them is with a little triangle of La Vache Qui Rits -- that was how school kids used to eat them, picking one up ont heir way to class.
