Worked in kitchens for years. The chef that trained me the most taught me to cut my bell peppers exactly like that, including popping out the stem.

I like to cut off the top just where the stem can pop out and use my knife to follow alongside the ribs to the bottom. If you grow your own peppers you will know that it's very rare for them to have the symmetry featured in this tutorial. Sometimes there are 5 or 6 ribs and sometimes there are only 3. Great video though. I believe anyone that has worked as a prep cook or just loves bell peppers will eventually figure this out on their own. At home I like to use the tops and bottoms first and freeze the walls of the peppers so when I need them for a Bolognese or chili it's fast and easy to make a brunoise.

worked in a kitchen this summer with a lady who was an executive chef in a kitchen for 25 years. She said cut it straight in half and pull out the insides with your gloved hand. That way you get longer strips without having to cut the top or the bottom possibly leading to waste

I’m 66 my mother taught me this when I was five. You’re teaching the people who don’t know how to cook. This is an old hack. LOL. Everything old is new again. 😀👍🏼

you can also go around the green part with a knife, push it in, remove it and the seeds and stuff the pepper with ground meat, rice and spices and stew them in a mixture of water, tomato paste and optionally half and half or sour cream ❤

Also the seeds have so much flavour and nutrients too. I use them too when I cook. I’m Greek cuisine we stuff them with mince, rice, chopped onion, parsley and mustard my.

Been doing that for years, I just slice it in half lengthwise, easier to pop out the half of core from each side😊😊😊

I hold the green part and slice down in barrel shape cuts, then I can discard the green part and seeds in one go.
Also it’s easier to slice them with the skin down

Didn’t know about the top part but pretty much cut mine the same I cut around the green top to get the meat, piping it out makes it easier thank you 🙏

You don't even need to cut it like this, you can remove the top, every white bit and seed with your fingers

I’ve never thrown away the seeds either. The stem is the only thing discarded. Seeds give any dish a bit of texture and some flavour.
