Delicious Fried Awama!!

We have crispy, sweet, and sticky Awama on the menu at Jamila's Kitchen! Such a delicious dessert made around the holidays (Eid) in many middle eastern countries like Palestine. Watch and follow along step by step on how to make this delicious fried dough ball! You can carry on the traditions of your ancestors and keep these popular ancient recipes alive!

Ingredients for Awama
2 cups flour
1 tbsp. sugar
1 tsp. yeast
A pinch of salt
2 tbsp. veg. oil
1 tbsp simple syrup
2 tbsp. fine semolina
1/2 tsp. baking powder
2 tbsp corn starch
1 cup of warm water
Simple Syrup

Instructions:
1. First start off by making the yeast mixture. Add 1/4 a cup of the 1 cup of water
with 1 tsp of yeast. Then add 1 tbsp of sugar with 2 tbsps of the 2 cups of flour. Whisk together until fully incorporated. Set aside for 10 minutes,
2. In a separate bowl ,mix the rest of the dry ingredients: flour, fine semolina, baking powder, corn starch, and salt. Then add in the wet ingredients: oil, syrup, and water with yeast mix.
3. Mix and knead dough for about 10 minutes. Dough should be smooth, creamy and no lumps. Slapping the dough against the side of the bowl will give you the perfect awama dough.
4. Let dough rest and rise for 30 minutes.

5. Once dough has finished resting, heat oil to medium heat. Fry Awama until golden brown. 6. Once dough awama has been fried once, throw all the awama back into the oil and fry for the second time.
7. Make sure to constantly move balls while frying to give them a perfect even color and to not burn. Fry for about 10 minutes or until awama feels hard.
8. Once out of the fryer, immediately dunk awama into syrup and let soak in syrup for about 10 minutes.

Notes:
*For frying, oil should be on medium heat.
*Make sure to wet your hand before touching the dough so it does not stick. Also add some water to a mini bowl to dip your spoon in so the dough slides off smoothly into the fryer. *For best results, watch the video!
*Awama will stay fresh and crunchy for about 2 days!
