This is a classic recipe from Italy. “Francese” is Italian for French. But my Italian mother, like all good Italian cooks, added parmigiano reggiano to the recipe, specifically, about a 1/4 cup to the flour mixture for dredging. Talk about ratcheting up the flavor (although it did make for a slightly messier frying pan). Totally worth it however! ❤️
