Potato and cheese pierogi:

For the dough:
2 1/4 cups all purpose flour, more for dusting
1/2 teaspoon salt
3/4 cup warm water
2 tablespoons butter, melted
1 egg

For the filling:
2 large russet potatoes, peeled and cubed
1/3 cup farmer’s cheese (you can sub w/ cottage cheese)
2 teaspoons salt
1 teaspoon garlic powder
1/2 teaspoon white pepper
4 tablespoons butter, melted

For the caramelized onion:
1/2 onion, sliced thinly
2 tablespoons butter

Directions:
For the dough: into a mixing bowl add the all purpose flour, salt, water then begin to knead using a stand mixer or by hand. Slowly add the melted butter then the egg. Continue to knead and add more flour if dough is too sticky. At this point I knead the dough by hand for a few minutes until it forms a smooth ball. Place back into the mixing bowl and cover.

For the filling: boil the peeled and cubed potatoes in some salted water until fork tender be sure you don’t boil any longer than that. Drain and use a potato ricer, this will make the potatoes lighter and fluffier. Add the farmer’s cheese, salt, garlic powder, white pepper and melted butter. Adjust seasoning to taste.

Divide dough in half to make it easy to work with and place one half back into the mixing bowl covered while you work with the other half. Roll the dough thinly then use a 3 inch biscuit cutter to cut the circles. You can re-roll the dough to make more circles. Stretch each circle gently then add about a tablespoon of the filling in the center. Bring the edges together and pinch to seal. If it won’t seal, try adding a bit of water to the edges. I ended up with about 36 pierogi. At this point you can place them on a baking sheet and freeze. After 30 minutes, place them into a ziploc bag.

To make the caramelized onion, melt the butter into a skillet and cook the sliced onion on low heat for about 8 minutes. Stirring occasionally. In the meantime boil some water in a pot and boil 8 pierogi for a few minutes until they float to the top. Then drain the pierogi and add to the caramelized onion, sear for a few minutes until they reach a golden crust. Served hot with sour cream or as is. Enjoy ❤️

Try making the filling with riced potatoes mixed with caramelized onions and mushrooms (on a oan with some butter). Then serve with sour cream, garluc and dill dip. Yum!
