How to make outstanding, homemade canned Corned Beef, as always easy step by step instructions, from start to finish.

Meat curing Info:
1.Curing gives meat, a rich, tasty, savoury flavour.
2.Meat is cured to prevent spoilage, tenderise and to give it lots of taste.
3.Curing removes moisture from the meat through osmosis, making it unfavourable and hostile for bacteria to grow.
4.Curing can make tough cuts of meat, like brisket, very tender.
5.Curing gives beef an appetising deep red colour.

I have made corned beef and pastrami in brines several times, but a dry brine would save a lot of space in the refrigerator. I plan on doing this for sure. Thank you so much. I have always known and used dry brining for meats and poultry I cook but never knew corned beef could be done this way. You have my exceptional thanks!😊. In the past ten years or so the quality of all the commercial corned beef I can procure around where I live has taken a dive in their quality so I have wet brined my own every so often. To be able to easily do this dry brine method is a lifesaver and it takes a lot less time in the brining.

Made this last week, apart from halving the recipe and forgetting the bay leaves whilst curing…(I put them in when pressure cooking) I made as per recipe. It turned out great! Taste like the corned beef you buy except better, I know exactly what’s in it!!! It was a bit much for me even halving as I’m a sole eater! My husband doesn’t eat it. So sandwiches and corned beef hash for a few days and some in the freezer. It was delicious and well worth the 3 days curing which is the only long winded part, that and the 24 hrs I left it in the fridge at the end. Highly recommend having a go.

I used to buy a corned beef and beetroot reawakened from shop across the road from my work in Huddersfield. I loved it ! I've never managed to find a tinned corned beef that tastes the same, and now I see why ! They made their own 😂. Thanks for the recipe.

I grew up in the Philippines and canned corned beef is ingrained in the culture’s cuisine.

I used to like the canned stuff, but now it’s too salty for me, and sometimes it doesn’t taste right (PureFoods, Hormel, Ox and Palm, etc.)

I will definitely give this recipe a try and add my own spices and seasonings post-pressure cooking. I will also experiment with other cuts of beef for texture and taste so I can hone down on a recipe that replicates what I remember eating as a kid but with a better quality and more control on what goes in the corned beef.

I've just prepped this and put it in the fridge. I couldn't believe how difficult it was for me to just find salt. Pure, on it's own salt with no additives and anti-caking agents. Looking forwards to it, and making a bit of your corned beef pie!

The picture of that delicious looking pulled beef and onion sourdough sandwich has inspired me to try this! I’ll be honest I wonder if I will get past that particular stage 😂 . I haven’t got a processor, but our local farm shop does their corned beef in the shredded style without this step and it’s fine so will do the same. By the way, Prague Powder? In 57 years I’ve never heard of this ingredient, you truly learn something every day.

My friend you won't believe my comment but I will tell you any way.

I visited my Grandmother in Seahouses today in Northumberland and had an amazing day.

She is 95 but 100% with it and i kid you not STILL drives.

After a nice meal in the town we were talking about food, to which she made us laugh by saying she loved proper Salmon not that new stuff (she meant tinned not fresh)

Well she then moved on to corned beef which she called bully beef (not sure what that is)

She then said why don't they make it fresh anymore like i did in the war.

John, this recipe i think will make her day to which im going to make it and take her some next week,
