Simple Pecan Pie

There's nothing quite like a classic pecan pie for Thanksgiving! This recipe has an optional addition of bourbon, which makes it a flavorful dessert for the holiday!

INGREDIENTS

- 1/2 cup white sugar
- 2 tablespoons melted butter, slightly cooled
- 2 eggs, beaten
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons bourbon (optional)
- 1 cup white corn syrup
- 1 1/2 cups pecans (1/2 cup coarsely chopped)

INSTRUCTIONS

Mix together sugar and butter. Add eggs and flour. Mix to combine. Add salt, vanilla bourbon (if desired) and corn syrup and whisk together. Fold in pecans and pour into prepared 9-inch pie shell.

Bake in a preheated 375-degree oven for 10 minutes. Reduce heat to 350 degrees and continue baking for 45-60 minutes until the middle just slightly jiggles and the edges are set. If crust starts to get too dark cover, with crust cover or tin foil.

Remove from the oven and let cool completely before serving.

I made the pie crust in the food processer the other day, I will never do it by hand again. I done all the ingredients in there. It was so easy I made enough for thanksgiving (12 double crusts) and froze them. I will be trying this new recipe along with my old one. Thanks!

Pecan is my favorite pie of all time. I only let myself have it around the holidays and I look forward to it every year. I always go the traditional route, but one year, I put a layer of chocolate chips in the bottom of the crust before baking... It was incredible. Thank you for sharing this great recipe!

This is how I've always made mine, except I use brown sugar and dark Karo Syrup. I guess it's family tradition, can't think of any other reason. I add rum. If I want to have some myself the next day, I have to make two and hide one! We have a huge gathering at Thanksgiving, so there's always apple pie, pumpkin pie and naturally pecan pie. (Not to mention two large, 20+ lb stuffed turkeys, a couple 13 x 9 pans of extra stuffing and about a dozen side dishes...)
