This is a very simple pie recipe from my Volume 1 cookbook. It doesn't have to be a holiday to enjoy a delicious Pecan Pie. We love it with Vanilla ice cream! You can make your own pie crust or buy a refrigerated shell to make the recipe even easier.

Pecan pie ~
Preheat oven to 450°F
Mix all ingredients one at a time
2 eggs
1/2 cup sugar
1 Tbs flour
1/2 stick of butter, melted
1/2 cup Karo syrup
1 tsp vanilla extract
1 cup pecans, halves and pieces
Pour into a homemade or pre made pie shell

Bake for 10 minutes at 450°F then turn oven temperature down to 350°F and bake for another 30-40 minutes until done.
Allow to cool completely
Serve with homemade sweetened whipped cream or Cool Whip.
