What I really want you to know, Chef John, is that when I planted some flowers in a pot today, i actually said out loud, "Gonna give this pot the ol' tappa tappa". And smiled at myself. Thanks for your fun self.

I work for a major home goods retailer that was founded in San Francisco in 1959, and I love seeing the parade of our products used in Chef John's presentations. Just saying... Oh and the recipes never disappoint either. I making this one for sure.

Watching Chef John slice up the beef reminded me of a conversation I had a few weeks ago with a friend. We were talking about how butcher shops/meat markets used to make ground beef. The one I worked at used Chuck to make Ground Chuck, Round Steak to make Ground Round, and Top Sirloin to make Ground Sirloin. The beef counter in Fred Meyer (Florence, OR) added blue cheese to their Black Angus ground sirloin (am thinking it was in 2008) and formed about an inch thick patty - I had not exactly been a fan of blue cheese but those burgers were delicious!
So thank you Chef John for showing people how they too can make their own ground beef for burgers or whatever and without any pink slime as fillers.

I like black and blue steaks, huge cooking technique in pittsburgh, i live in kentucky, but i am a steelers fan. For my steak, the rarer the better, burgers also, if they have never been frozen, it changes the texture

I didn't use self cut steak ground but I tried it out with some premium ground and good grief is this good. Especially putting a ton of fresh pepper as the only seasoning (salt of course but that is just flavor enhancement ). It starts to become hard to figure out where the pepper funkyness ends and the blue cheese starts. Absolutely love it.

This if one of my favorite Burger's. I use Blackened seasoning and blue cheese it's an awesome combination.

I don’t know if you will see this chef John, but I just want to say thank you. You’ve taught me so much with these videos! For some reason you remind me of Emeril Lagasse, he was the one person I remember watching growing up, and to see some resemblance of him in you (to me anyways) just brings back good memories of what I learned from watching him(: Thanks again chef John, and keep the awesome videos coming!

Thank you for the recipe, Chef John! I made these today for my family, and they just _raved_ about them. They said they like these even better than regular hamburgers. I used sirloin and shoulder steak, and instead of blue cheese, I used Vermont sharp white cheddar. I also caramelized the onions instead of pickling them -- but, man, this recipe is fantastic. Even a moron like me can make these burgers!

Oh this is the answer I've been waiting for! I don't like store ground beef because it IS overworked. I wasn't about to grind my own. This looks perfect!
